Oatmeal Banana Cookies

I am always looking for new ways to get oatmeal into my diet!  So when I came across this recipe I thought it had HUGE potential!

These are NOT your super sweet cookies, and are more like a granola bar in texture but they are extremely healthy and really yummy!

Incredients:
3 Ripe Bananas
2 Cups of Rolled Oats
1/3 Cups Veggie Oil
1/2 t salt
1 Cup raisins

Pre-Heat Oven to 350 degrees

In a large mixing bowl mash the bananas.  Add the Oats, Veggie Oil, Salt and Raisins and mix until well incorporated.  
Let the mixture sit for 15 minutes.

Spoon onto an ungreased cookie sheet and bake for approximately 17 minutes or until the bottoms and edges just start to turn brown.



The texture of these "cookies" will remain soft and almost gooey.  I like to store them in an airtight container in the refrigerator.

Useful Tips:
-DO NOT FORGET THE SALT.  
I know it is a small amount of salt but it will make a BIG difference in the taste.

-Try adding different dried fruits, nuts, and or chocolate chips.

-Applesauce can be substituted for the oil to make them even more low fat!

  1. I may just try these with the browning bananas sitting on my counter....how long did they stay fresh in the fridge? Sounds like they'd only last a day or two.
