Brown Sugar Meatloaf

As part of my so far unsuccessful attempt at Meal Planning, I decided to try my hand at a new kind of meatloaf!

When I first saw the words "Brown Sugar Meatloaf"  I new that anything with Brown Sugar in it HAD to be good!

I was right!  It was juicy, and tender and just a little bit sweet.  Oh did I mention it is SUPER easy to make! 

Here is the recipe:

Prep Time: 10 minutes Cook Time: 1 hour

INGREDIENTS:
1/2 Cup Brown Sugar
1/2 Cup Ketchup
1 1/5 lbs for lean ground beef
2 Eggs
3/4 Cup of Milk
1/4 teaspoon Ground Ginger
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup of cracker crumbs (as fine as you can get them)

To Make it:

- Pre-heat oven to 350 degrees.
- Lightly Grease a 5x9 loaf pan.
-Press the brown sugar into the bottom of the pan and spread it with the ketchup.
-Mix the rest of the ingredients in a large mixing bowl.  DO NOT OVER MIX
-Place the meat mixture on top of the ketchup and brown sugar and press gently to form the loaf pan.
-Cook at 350 degrees for about 1 hour or until the juices run clear.  



If you wish to create a sauce for your meatloaf do the following:
-Saute half of a small onion finely chopped in 1 Tablespoon of Butter until translucent.
-Add 1/4 Cup of brown sugar and 1/3 cup of Ketchup to the pan and mix until the sugar is dissolved and sauce is heated through. 
-Pour over slices of your meatloaf.
