Chili Pie - Recipe

So sometimes I need something simple, but different. 

I love chili but don't have the time to make it from scratch, so I often use the packet of seasoning and doctor it up as much as I can.
Well this week I wanted more than just chili,

Soooooo...

Chili Pie it is!!!

Ingredients:
1lb Ground Beef
1 small onion chopped
2 cloves garlic chopped
1 green pepper chopped
1 T salt
1 packet of your favorite chili seasoning
1 small hot pepper diced fine (optional)
1 can of kidney beans (undrained)
1 can diced tomatoes (undrained)
1 box Jiffy Corn Bread Mix
*1 egg*
*1/3 Cup Milk*
1/2 Cup of Cheddar Cheese

Instructions:
Saute onion, garlic and pepper with salt until translucent and soft.  Add ground beef and brown. 
While beef is browning preheat oven to 400 degrees.

When beef is almost done browning, add the hot pepper.
When beef is browned add beans, tomatoes and chili seasoning.  
Simmer on low for about 10 minutes.

While chili is simmering prepare Corn Bread Mix using box instructions (egg and milk).
Let corn bread mix sit for 10 minutes.

Pour chili mixture into a 9inch cake pan until it is about 2/3 up the side of the pan.  
You will most likely have some chili left over.  
DO NOT OVER FILL WITH CHILI!!!
Cover chili with a layer of corn bread mix.

Cook at 400 degrees for 15 minutes or until the edges of the corn bread just start to turn lightly brown.  
Sprinkle with cheddar cheese and cook for about 2 more minutes until it melts.

***Chili will bubble up over the top of some of the corn bread you may want to place a cookie sheet under the pan to catch any drippings especially if you over filled the pan!***

Let cool for about 5 minutes then cut it like a pie and enjoy!!!
